Day 227: Hey Shrimp

Nono taking a break at work
Anyone who knows me, knows I'm very New Yorky in my cooking skills,  meaning I can order up a storm and have it delivered.  Somehow though I was able to come up with a deelish sandwich for this contest.  So how's a guy like me come up with a recipe?  What on Earth are you suggesting??  That this isn't my original recipe?  This sandwich was passed down from my great great Italian fisherman grandfather, Nono....or something like that.

Nono's Shrimp Sandwich:
  • Sliced baguette
  • 8-10 cooked shrimp
  • Red onion
  • 6 black olives
  • 3 tsp mayo
  • 1/2 tsp smoked paprika
  • 1 pinch ground chipotle chili pepper
  • 2 tbs hummus
  • 3 tsp pesto
  • 3 tbs bluecheese




Cut the baguette in half but not all the way through. Open it up, and spread the hummus on the top inside and the pesto on the bottom inside. Spread the shrimp on the bottom. Cut the blue cheese into 4-6 small chunks a spread over the shrimp. De-pit the olives and lay them along the shrimp as shown in the photo.
Toast the open sandwich until the cheese just starts to melt.While toasting, mix the mayo with the smoked paprika and the chipotle.
When the sandwich is ready, spread the mayo on top of the shrimp (and melted cheese). Cut a few slices of red onions, about 1 or 2 cuts = 10 half-onion rings. Lay them on top. Then close the sandwich and enjoy.
